Busy Bee

Hope everyone had a great summer!  I definitely did!

I know I have been neglecting my blog for about 9 months now due to lots of things going on in my life.  I have been busy with my kids' school events, family events, trips and kids' school strike that has been going on since May of this year.  It has come to a point that I am sick of both the government and the teachers because afterall, it is not about the children's education; it is about who has more control over the other and neither one(s) spend their money wisely.  Kindergarteners do not need to learn from 5 iPads(in each class).  They need to learn from hands-on, in front of their face, and from their teachers, not a newly installed app on a device with automated voices and sounds which to them probably feels like they are playing a new game they cannot play at home.  I know my blog is about my baked goods and this isn't a very fortunate way to re-open my blog, but I just had to "let it out".  The strike had "finally" ended and the kids will be starting school coming Monday.  It is very unfortunate for the kids to lose their education for 3 weeks.  For some people 3 weeks isn't much, but for the kids, they are losing 3 weeks of developmental of learning(if that made any sense).  As a mom, I did my best to home-school them in the mean-time and hopefully that made them ready for school.  I know that it may not be the same as the teachers, but better than nothing, right?

As for myself, other than being a mom, I have been learning all different types of baked goods and came up with lots of new recipes.  I will be slowing posting them when the kids enter school and I will try my best to keep my blog going.

Waffles for Christmas!!

I know this isn't really baking, but I had to post this.  After all the present opening in the morning and the prank we put on our kids with Santa's late letter(I know! We're bad parents. Lol. But it was fun to see the kid's expressions.), we had yummy waffles for breakfast. ^^*

Signature Cheesecake with Fresh Fruits

This is my signature cheesecake made for my husband's other work since they were having a small christmas party for only the hard workers/chefs, although it was really late and past the kid's bedtime, we didn't attend and only dropped off the cheesecake.  It would have been nice if it were berry season, since they would be much sweeter, but I had to work with what I can obtain.  Also, it would have been nice if I had kiwis to make the cake more appealing in color.

Assorted Macarons

1. Peppermint Macarons with White Chocolate Ganache & Crushed Peppermint Candy
2. Earl Grey Macarons with Honey Buttercream
3. Coffee Macarons with Espresso Chocolate Ganache
4. Pistachio Macarons with White Chocolate Ganache

Pumpkin Creamcheese Nut Bundt Cake

I recently went to Edward's fieldtrip to the pumpkin patch and I had seen something I have never seen in my whole life!  Blue Pumpkins!  They had shown blue pumpkins and caught to my attention something I must try, so I have been searching and phoned everywhere to find this, only to find that it is not a pumpkin!!  It's called BLUE HUBBARDS.  They are a squash; they come in a variety of sizes and are a mix of light grey, light blue, and white.

Kahlua Coffee Chiffon Cake

Bitter and strong taste from the Kahlua, light and soft spongy cake, and nutty from the sprinkled almonds, glazed with coffee syrup when warm.  Perfect for your morning wake up or afternoon refresh.
